Here's a Wiki How on how to set up and start a daily journaling habit. For travel journaling specficially, I recommend the book Writing Away by Lavinia Spalding
For travel journaling, I'm a big fan of bulleted lists and creating TOP 10 lists like Top 10 Family moments and Top 10 Happy Accidents and so on. I also like using gel ink, highlighters and tons of color.
I now have a journal for each novel I write, too.
In other words, journaling is awesome.
